Nestled in the heart of Escondido, Sage Hill Ranch Gardens invites you to join a select gathering of 55-60 guests for this exclusive event.

The experience begins at 4:30 PM with a cocktail hour where you can enjoy a selection of artisan bread boards and chef's choice delicacies. As the evening unfolds, Host and Farmer Spencer will lead you on a 45-minute tour of our regenerative farm, offering insights into the sustainable practices that are at the core of our ethos.

Following the tour, settle in for a culinary adventure under the stars with the ambiance of live music. Our 5-course dinner prepared by renown chefs, featuring the freshest ingredients from our farm, will tantalize your taste buds and conclude with a sumptuous dessert, wrapping up the experience around 9 PM.

Set in our all-outdoor venue, we encourage guests to dress for comfort and wear suitable footwear for a walk through natural surroundings.

“Chef Sean McCart, based in San Diego, California, is a renowned culinary talent known for his work as Chef de Cuisine at iconic restaurants and his appreciation for farm-fresh produce and sustainably-sourced meats. He was appointed Chef de Cuisine at the fine dining institution, Mister A's restaurant. Chef McCart has developed his skills and style in various prestigious kitchens. Before his role at Mister A's, he served as the Executive Chef at Pueblo in Pacific Beach and had brief stints as the Chef de Cuisine at The Patio on Goldfinch and as a sous chef at Juniper & Ivy in Little Italy. His culinary journey reflects a deep-rooted passion for entertaining and creating memorable dining experiences, inspired more by the people he cooks for than the chefs who came before him.”

Chef: Stéphane Voitzwinkler

“Chef Stéphane Voitzwinkler, the Executive Chef at the iconic Mister A's restaurant in San Diego, is a master of gourmet cuisine with a distinguished career. Born in the Alsace-Lorraine region of France, Chef Stéphane began his formal training in the culinary arts at just 13 years old, having developed a love for cooking and fine food from a young age while helping his grandmother prepare meals.

Chef Stéphane moved to San Diego in February 1989, starting at the former Le Meridian Hotel in Coronado. He quickly gained recognition as a gifted chef in the area. His journey continued at the Hyatt Regency's Sally's restaurant, where he honed his skills and reputation for innovative, sophisticated cuisine over nine years.

In his role at Mister A's, Chef Stéphane Voitzwinkler has been instrumental in refining the restaurant's menu with a modern take on French Provincial cooking. This approach focuses on fresh, light ingredients, eschewing heavy cream and butter sauces for flavorful reductions using fresh vegetables, herbs, wines, and consommés. His cuisine reflects the sophisticated styles of southern France and the Mediterranean.

With over 20 years at the helm of Mister A's, Chef Stéphane's culinary style has evolved to include influences from around the world, including Asia, Africa, South America, and the U.S., while still grounded in his formidable French technique. His dishes are known for being simultaneously inventive and grounded in classic flavors, earning him acclaim in San Diego's culinary scene.”

Chef: Davin Waite

“Chef Davin Waite, a key figure in San Diego's sustainable food community, is known for his inventive and boundary-pushing culinary style. As a classically trained sushi chef, Waite co-owns and oversees culinary operations at several Oceanside restaurants, including Wrench & Rodent Seabasstropub, The Plot, Shoots Fish x Beer, and Brine Box.

His approach to cooking is deeply rooted in sustainability and innovation. Waite is passionate about minimizing food waste and celebrating local proteins and produce. His expertise includes creating marketable dishes from bycatch and less utilized cuts, and he is particularly skilled at using the whole fish in creative ways. His efforts in sustainable cooking have earned him recognition, including the 2022 Sustainability Advocate Award by the California Travel Association.

Waite's culinary journey began under the instruction of Chef Hiro, a master of sushi and French and Italian cuisine. His career has been marked by a commitment to total utilization and zero-waste cooking, as well as educating others on these practices, ranging from elementary students to city officials. His restaurants reflect his mission and values, offering a blend of seafood-forward and plant-based cuisines that prioritize sustainability and innovation”

“Chef Moira Hill, a San Diego native, has built a notable career in the culinary world with her commitment to sustainability and whole-food cooking methods. She is deeply invested in zero-waste efforts, focusing on using local and seasonal ingredients, and repurposing food scraps in her dishes. Chef Hill's journey began early, as she grew up cooking with her family and turned her passion into a professional pursuit. After culinary school, she gained experience in several prestigious restaurants across San Diego County, including George’s at the Cove, Juniper & Ivy, Tidal Restaurant, Trust Restaurant, Waterbar, and Nolita Hall, before becoming the Executive Chef at Lilian’s at The Inn at Rancho Santa Fe.

At Lilian’s, Chef Hill has crafted a menu that showcases the abundance and diversity of coastal California, using the freshest and most sustainable ingredients sourced from local farmers, ranchers, and fishermen. Her menu includes a range of dishes from king salmon crudo with truffle ponzu and tempura crunch to tuna tartare with beer-battered avocado, as well as hearty mains like half-roasted chicken with hazelnut butter and a 16-ounce ribeye with confit garlic. Her approach to cuisine is underpinned by her passion for environmental consciousness and community connection, making her a standout figure in the San Diego culinary scene”
